Ingredients (serves 4)

16 fresh whole tiger prawns, roughly 500g (500gm udang besar)
1 medium free-range egg, lightly beaten (1 biji telur dipukul sedikit)
1 tbsp milk powder (1 sb susu tepung)
100g plain flour (100 gm tepung gandum)
Sunflower oil, for deep frying (minyak 7ntuk menggoreng)
2 tbsp unsalted butter (2 sb mentega)
a large handful curry leaves (segenggam daun kari)
1 red chilli, deseeded and finely chopped (1 biji cili merah - buang biji dan cincang halus)
100g Nestle instant cereal flakes (100 gm bijirin nestum)
1 tsp sugar (1 sk gula)
Sea salt and freshly ground black paper, to taste ( garam dan serbuk lada hitam)


Method

Clean the prawns, de-vein the prawns and keep the shell on for presentation. Feel free to remove the heads and shells if you wish, to make it easier to eat later.

Bersih dan belah belakang udang dan buang uratnya. Kalau suka kupas kulitnya.

In a large bowl, mix the flour with the milk powder. Add the prawns and toss to coat thoroughly.

Dalam mangkuk besar, campur dan kacau sebati tepung dan susu. Masukkan udang kedalam telur dan salut rata. Masukkan udang yg bersalut telur kedalam adunan susu dan tepung.

Heat the oil in a large pan until a piece of bread sizzles and turn golden brown in 30 seconds. Deep-fry the prawns in batches till cooked and golden brown. Remove and drain in kitchen paper and keep warm in a low heat oven.

Panaskan minyak. Goreng udang hingga keperangan. Toskan minyak dan panaskan dalam oven yg bersuhu suam.

Heat up a wok over medium heat. Add the butter and fry the curry leaves for a minute, untill fragrant. Add the chilli and then the cereal. Reduce the heat and stir-fry for 2 minutes, the cereal should be lightly golden brown and have absorb most of the butter. Add the prawns and toss to mix thoroughly. Season with sugar, salt and pepper to taste . Serve immediately.

Panaskan mentega dan goreng daun kari hingga naik bau. Masukkan cili dan bijirin nestum. Kecilkan api. Goreng hingga bijirin keperangan dan menyerap mentega. Masukksn udang dan gaul raya. Perasakan dengan gula, garam dan lada hitam secukup rasa. Sedap dimakan ketika panas.
