Homemade Mascarpone Cheese

Here goes the recipe to obtain 500 grams of home made Mascarpone.

  • Fresh Cream- 600 ml
  • Lemon Juice - 1/2 a lemon
  • Use a double boiler method to heat the cream
  • In a large pan add some water and keep another pan inside it so that you can hold the cream
  • You do not want to heat the cream directly. 
  • When the water boils the cream will get heated up and using the finger tips see if its warm. 
  •  It take about 10 minutes to get it warm.
  • Add in the lemon juice and stir with a wooden spoon for some time.
  • Later we will see that the cream will coat the spoon like a thick custard.
  • Bring the cream down from the double boiler and allow to cool.
  • Pour the cream into a strainer lined with thick muslin , cheese or cotton cloth.
  • Set in the fridge for one day so that the whey will collect below the strainer and the cheese will thicken.
  • After 24 hrs remove the cheese from the cloth and use immediately to make Tiramisu or store for 3-5 days in an airtight container in the fridge.
  • Only 1/4 cup or less of whey will separate from the cream to get a thick and silky textures mixture of Cheese.
