Nasi lobak merah (carrot rice)

Menjamu tetamu dengan nasi karot tengahari ni....dipadankan dengan coselaw dan seven spices roasted lamb, potato n carrot.....

Nasi lobak merah (carrot rice)

INGREDIENTS (Bahan2nya)

2 cups of rice (2 cawan beras)

3-4 cups water (saya sukat air ikut jenis beras...kalau basmati 1: 1 1/4)

½ onion, finely minced (1/2 biji bawang besar - cincang)

A couple tablespoons of chopped green bell pepper (2 sb cili benggala/capsikum yang dicincang - lebih kurang 1/2 biji)

3 cloves garlic, minced (3 ulas bawang putih)

3 tablespoons oil (3 sb minyak)

1-2 tsp. salt (to taste) (garam secukup rasa)

1 sb lada hitam biji

Several cardamom pods (5 biji buah pelaga)

2-3 whole cloves (3 kuntum bunga cengkih)

A few pieces of cinnamon bark (1 batang kulit kayu manis)

1 whole green chili, optional (sebiji cili hijau)

2-3 carrots, grated ( 2-3 batang lobak merah)

HOW TO MAKE

1.      Cook the onions and bell pepper in oil over medium heat for 5-10 minutes. Add the garlic and cook just until before the garlic turns brown. Add the salt and pepper. (Tumis bawang dan cili benggala selama 5-10 minit. Masukkan bawang putih dan tumis hingga keperangan. Masukkan garam dan lada hitam)

2.      Add the grated carrots and cook in the oil until the oil turns yellow and the carrots are soft, about 15 minutes. (Masukkan lobak dan masak hingga lembut selama lebih kurang 15 minit)

3.      Add the rest of the spices, the green chili and the water and bring to a boil over high or medium-high heat until most of the water is absorbed, about 10-20 minutes, depending on the kind of rice you use. Watch to make sure the rice doesn’t burn. (Masukkan bahan lain dan masak hingga air kering dan beras kembang dengan sempurna)

4.      Once most of the rice is evaporated, lower the heat to warm/low and cover the rice. Steam for about 10 minutes or until all the water is absorbed and the rice is cooked through. (Perlahankan api dan tutup periuk dan biarkan selama lebih kurang 10 minit atau sehingga nasi masak sepenuhnya. Setelah itu, buka penutup dan biarkan seketika sebelum di kareh agar nasi cantik sebiji2)
