Strawberries Muffins


Aktiviti di dapur sebelum ke hospital hari ni ialah baking roti dan muffin serta masak gulai masam perak. Kena masak awal sebab hari ni anak ada aktiviti ko kat sekolah. Dah settle masak senang sikit hati...

Tanya anak nak bawak bekal apa arini.....nak kek tak....dia kata nak..... bila saya tanya nak kek apa, dia kata nak cheese cake.....waduh....chiskek tak sempat la na buat dalam masa sejam ni nak oiii...
Pastu bagi cadangan kat dia kira buat muffin jer la....muffin strawberry....tapi guna puree strawberry sebb takde stok yg fresh...nak cari pun tak sempat dah... Disebabkan saya guna cup utk roti....beso la muffin jadinya....dapat la sepuluh ketoi...5 ketoi tak dak taboq apa2...5 ketoi taboq badam ngan gula perang.... Jadi la....cukup la seketoi sorang.

Strawberry Muffins
Ingredients
2 cups all purpose flour, spooned into measuring cup and leveled-off with knife, plus 2 teaspoons more for tossing with strawberries (2 cawan tepung gandum + 2 sk utk salut strawberry kalau guna yg segar la...hihihi)
2 teaspoons baking powder (2 sk baking powder)
3/4 teaspoon salt (3/4 ak garam - saya tak letak sebab guna salted butter)
1 stick or 1/2 cup unsalted butter, softened (1/2 cawan atau 125 gm mentega tanpa garam)
1 cup granulated sugar (1 cawan gula - saya guna 3/4 cawan jer)
2 large eggs (2 biji telur gred A - saya guna 3 biji gred C)
1-1/2 teaspoons vanilla extract (1 - 1/2 sk esen vanilla - saya guna 1 sb sbb takde almond extract)
1/4 teaspoon almond extract (1/4 sk ektrak badam)
1/2 cup milk ( 1/2 cawan susu)
2-1/4 cups diced strawberries, from 1 pint, divided (2 1/4 cawan strawberry - cincang kasar)
2 tablespoons turbinado sugar, for topping (2 sb gula tebu perang untuk topping - guna gula perang biasa pun ok)

Instructions
Preheat the oven to 375°F. Line a 12-cup muffin tin with paper liners; spray the liners and the pan with non-stick cooking spray. (Panaskan oven pada suhu 170 C. Susun paper cup dalam muffin tray atau dalam loyang jer pun ok.)
In a medium bowl, whisk together the flour, baking powder and salt. In the bowl of an electric mixer, beat the butter and granulated sugar for about 2 minutes.
(Dalam mangkuk sederhana, gaul rata tepung, baking powder dan garam. Dalam mangkuk lain pukul gula dan mentega selama 2 minit).
Add the eggs one at a time, scraping down the sides of the bowl and beating well after each addition.
(Tambah telur satu persatu sambil pukul sebati telur)
Beat in the vanilla extract and almond extract. (The batter may look a little grainy -- that's okay).
(Masukkan esen dan ekstrak dan pukul sebati)
With the mixer on low, add the flour mixture in three separate additions, alternating with the milk and ending with the flour.
(Dengan mixer kelajuan rendah, tambah tepung berselang seli dengan susu dan diakhiri dengan tepung)
Toss the strawberries with 2 teaspoons of flour (this will keep them from sinking to the bottom). Set 1/2 cup of the berries aside. 
Salutkan strawberi  dengan tepung untuk elakkan strawberi mendap ke dasar muffin. Ketepikan 1/2 cawan)
Add the remaining berries to the batter and fold with a spatula until evenly distributed. Do not overmix.
(Masukkan bakinya ke dalam adunan trpung. Gaul rata strawberry dengan spatula. Jgn sampai terlebih kacau yer)
*****disebabkan saya guna puree, saya tuang jer semua puri dalam adunan tepung dan gaul rata.
Scoop the batter into the prepared muffin tin (an ice-cream scoop with a wire scraper works well here); they will be very full. 
(Sudukan adunan ke dalam muffin cup)
Scatter the reserved berries evenly over the muffins, then sprinkle the turbinado sugar over the center of each muffin (keeping the sugar away from the edges will prevent sticking).
(Tabur baki strawberry di atas muffin diikuti dengan gula kat tengah2 muffin. Jangan tabur kat tepi pan kalau guna pan nanti melrkat susah nak krluarkan muffin tu). - saya tabur kepingan badam dan gula.
Bake for about 30 minutes, until lightly golden and a cake tester comes out clean. 
(Bakar selama 30 minit atau sehingga sedikit keperangan).
Run a sharp knife around the top edge of each muffin to free it from the pan if necessary (the edges can stick), then let the muffins cool in the pan for about 25 minutes. Transfer the muffins to a rack to cool completely.
(Susun muffin di atas rak untuk sejukkan).
