LAMB KABSA RICE , FATTOUSH SALAD, SALASA HARA, MINT TEA & NAM DOK ANCHAN


50 paxs LAMB KABSA RICE, fattoush salad, arabian mint tea, nam dok anchan. Feedback amat memberansangkan, sampaikan tetamu yang tinggal di Kay Ell pun tanya kalau order boleh hantar ke tidak....jawabannya boleh dengan charge penghantaran dan volume yang reasonable. Lagi satu yang diorang suka sangat ialah air nam dok anchan.....siap suruh jual kordialnya lagi.....hehehe.... sebenarnya saja testing....nak tengok feedback...diorang boleh terima ke tak air tu.... Alhamdulillah.

LAMB KABSA RICE
A)untuk kambing

1 kg lamb shoulder
2 tbsp oil
1 large onion-chopped
2 large Tomatoes-pleed and chopped
1 stick Cinnamon
1/2 tsp black pepper pwdr
1/2 tsp Cardamom pwdr
1/2 tsp cumin powder
4 pieces Cloves
3 pieces Bay leave
1 tsp kabsa spices
1 tsp ginger paste
1 tsp garlic paste
3-4 pcs cardamom pods
2 tbsp Salt

In medium casserole heat oil, add onion and stir fry for 4-5 minutes until light golden brown, add garlic and ginger.. Continue fry until golden and add lamb, cover with water.
Add cardamom, cinnamon, cloves, black pepper, bay leave, kabsa spices, corainder, cumin, bay leave, tomatoes and cardamom, bring to a boil and cook for 20 minutes or until lamb is tender. 

 
B) untuk sediakan nasi

3C basmati rice
1/2C raisins
3 tbsp Oil
2 tbsp Ghee
1 medium onion-chopped
1 stick Cinnamon*
1/3 tsp black pepper pwdr*
1/2 tsp Cardamom pwdr*
3-4 pieces Cloves*
2 pieces Bay leave*
1 tsp kabsa spices*
1 tsp ginger powder*
1 tsp garlic paste*
1 tbsp lemon juice
3-4 pcs cardamom pods*
Salt to taste
3 tbsp tomato paste
1/4 tsp tumeric powder*
1/2 tsp corainder pwdr*
1/2 tsp cummin pwdr*
2 pieces dried lemon (loomy)*
1 medium green capsicum- medium chopped*
Wash rice and raisins well.
Soak rice in salted water for 30 minutes.

Add salt after half cooking time. Remove lambs from the stock and keep aside, strain the stock.
In a medium casserole, heat oil ghee and oil.  Add onion and stir fry until transparent.
Add* and continue fry until fragrant. Add rice, fry till transparent and add tomato paste, salt and tummeric powder, fry again for 2 minutes.
Add chicken stock, lemon juice and lamb, cover tightly. Leave 25-30 minutes until rice is cooked.
C  (optional)
1/4C fried pine nuts
1/4 chopped fresh corainder
Place Kabsa Rice in the platter and sprinkle with roasted pine nuts and fresh corainder leave on the top Serve it with dakkos or maraq. 

 

Fattush / arabic fattoush salad

Bahan2nya

Iceberg salad- cut to medium size as you like (daun salad potong ikut suka)
Tomatoes- cut to medium cube (tomato potomg kiub)
Cucumbers- cut to medium cube (timun jepun potong kiub)
Fresh Parsley- chopped (parsley cincang)
Fresh Corianders leave- chopped (daun ketumbar cincang)
Fresh Mint- chopped (daun pudina cincang)
Salt to taste (garam secukup rasa)
Juice from 1/2 lemon (perahan lemon)
1 tbsp Apple vinegar (1 sb cuka apple)
2-3 tbsp Extra virgin olive oil (3 sb minyak zaiton)
Fry tortilla bread for garnished on the top*(ni tak letak) (roti tortilla goreng untuk hiasan di atas)
How to prepare:
Mix all in the bowl except *. Gaul semua bahan kecuali *. Put in and individual bowl/ plate and sprinkle with frying tortilla bread and serve with your favorite meal. Hidangkan di dalam bekas dan tabur tortilla.


Salasa hara

2 pokok daun ketumbar
1 biji bawang holland
5 biji cili hijau
10 biji cili pafi
2 biji tomayo ranum
Perahan sebiji lemon
Garam dan gula secukup rasa

 
Arabian mint tea

Daun pudina
Teh uncang
Buah pelaga
Bunga cengkih
Air mendidih
Gula secukup rasa

Nam dok anchan

kelopak bunga telang (rendam dengan air panas utk mengeluarkan warnanya dan toskan kelopaknya - ambil airnya sahaja)(atas rebus kelopak bersama gula, daun pandan dan air secukupnya hingga pekat untuk dijadikan kordial - simpan di dalam peti sejuk untuk tahan lebih lama)
air gula (masak gula dengan air dan beberapa helai daun pandan)
Air Perahan limau kasturi (saya rebus jus limau kasturi dengan gula untuk disimpan menjadi kordial limau kasturi)
Air dan ketul ais secukupnya
