Thai Chicken with Basil
INGREDIENTS
1 1/3 pounds boneless, skinless chicken breasts (about 4), cut into 1-by-2-inch pieces
4 keping dada ayam dipotong nipis
2 tablespoons Asian fish sauce (nam pla or nuoc mam)
2 sb sos ikan
1 1/2 tablespoons soy sauce
1 1/2 sb kicap
1 tablespoon water
1 sb air
1 1/2 teaspoons sugar
1 1/2 gula
2 tablespoons cooking oil
2 sb minyak
1 large onion, cut into thin slices
1 biji bawang besar hiris nipis
3 fresh red chiles, seeds and ribs removed, cut into thin slices, or 1/4 teaspoon dried red-pepper flakes
3 biji cili merah, buang biji dan hiris nipis atsu 1/4 sk cili kering (flakes)
3 cloves garlic, minced
3 ulas bawang putih cincang
1 1/2 cups lightly packed basil leaves
1 1/2 cawan daun basil
DIRECTIONS

In a medium bowl, combine the chicken with the fish sauce, soy sauce, water, and sugar.

In a large nonstick frying pan or a wok, heat the oil over moderately high heat. Add the onion and cook, stirring, for 2 minutes. Stir in the chiles and garlic; cook, stirring, 30 seconds longer.
Dalam kuali, panaskan minyak. Tumis bawang. Masak selama 2 minit. Masukkan cili dan bawang putih. Kacau 30 saat.
Remove the chicken from the marinade with a slotted spoon and add it to the hot pan. Cook until almost done, stirring, about 3 minutes.
Asingkan ayam dari bahan perap dan masukkan dalam kuali. Kacau sebati dan biarkan hingga masak selama kira-kira 3 minit.
Add the marinade and cook 30 seconds longer. Remove from the heat and stir in 1 cup of the basil. Serve topped with the remaining 1/2 cup basil.
Tambah sos perap tadi dan kacau selama 30 saat. Tutup api dan alihkan kuali dan masukkan 1 cawan basil. Kacau sebati. Hidangkan dan taburkan 1/2 cawan basil lagi.

Tumbuk bawang dan cili hingga lumat. Tambah garam dan gula secukup rasa. Gaulkan tempoyak.
