Banyak resepi2 sihat yang boleh kita hidangkan untuk keluarga tersayang. Nak buat pun tak susah sangat dan pastinya menyihatkan. Resepi sup brokoli ni saya share 2 pilihan resepi tapi kali ni saya gunakan resepi dari allrecipes.com.
Untuk sup cendawan, saya guna 3 jenis cendawan.....cendawan tiram putih, cendawan shitake dan enorki. Cendawan butang tak jumpa la kat supermarket yg saya singgah semalam.
Saya hidangkan sup ni dalam mangkuk roti. Resepi sama mcm yg dikongsi sebelum ni. Cuma kali ni saya buat saiz comel2 jer. Cukup utk sekali budak kecik makan....
Kebetulan hari ni ada tetamu datang....kawan satu maktab masa haji tahun lepas. Hidangkan roti dengan 3 pilihan....2 sup dan kuah durian.

INGREDIENTS
1 pound regular white mushrooms, cleaned, quartered or sliced
1 Tbsp lemon juice
1 Tbsp unsalted butter
2 Tbsp minced shallots
1 Tbsp chopped fresh thyme or 1 teaspoon dried thyme
1/2 bay leaf1 teaspoon salt
1/2 teaspoon fresh ground pepper
2 cups heavy cream
1 1/2 cups chicken stock
1 teaspoon cornstarch dissolved in
1 Tbsp water
Minced parsley for garnish
METHOD
1 In a food processor, coarsely chop mushrooms and lemon juice.
2 Melt butter in (4-5 quart) sauce pan and lightly sauté shallots on medium heat. Add mushrooms, thyme and bay leaf, sauté over moderate heat for 10-15 minutes, or until the liquid that is released from the mushrooms disappears.
3 Add salt, pepper, cream and chicken stock and bring to boil. Reduce heat and simmer for 20 minutes.
4 Add cornstarch and simmer for 10 minutes, stirring constantly. Correct seasoning and add more lemon juice to taste.Serve sprinkled with a little parsley.

Ingredients
2 tablespoons butter
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste
Directions
Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree.
Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

Bahan-bahan:-
Brokoli
3-4 ulas bawang putih
1 biji bawang besar (bawang holland/kuning)
2 sudu besar tepung jagung
Susu full krim
Garam secukup rasa
1 sudu teh serbuk lada hitam (optional)
1/2 biji kentang (small size) – di potong dadu (optional)
Stok/kiub ayam – optional
Minyak untuk menumis
1 - potong dadu bawang besar dan bawang putih. Panaskan minyak (aku prefer guna marjerin, sebab nnti bau lagi wangi). Tumiskan bawang sampai naik bau dan bawang dah agak layu. layu ye, bukan hangus tau.
2 – masukkan kentang yg dah di potong dadu & brokoli (make sure potong lah dulu, takkan nak masuk seketul gedabak tu). kacau sekejap, masukkan air (agak² lah banyak mana), renehkan kejap. Agak-agak dah nak empuk tu, mati kan api, biarkan sampai suam-suam kuku.
3 – Masukkan bahan dalam periuk tadi dalam blender, blend kan skalik semua tu. me prefer not so halus. ada chunky² baru lah terasa sedap nya.
4 – masuk kan balik bahan yang dah di blend tadi dalam periuk, panas kan balik, masuk kan susu krim tadi. adjust ikut kepekatan korang nak – kacau.
5. Bancuh tepung jagung dengan air biasa, masukkan air bancuhan tu ke dalam periuk. kalau nak lagi pekat, masukkan tepung jagung extra. masukkan juga bahan optional tadi (serbuk lada hitam – nk bg rasa pedas sikit & kiub ayam – nk bg perasa), kacau sampai sebati. masuk kan garam. kacau sampai mendidih, tutup api. siap. ngap ngap.
