Itulah tajuk minum petang hujung minggu ni. Alhamdulillah.....lama juga berangan2 nak buat tapi malas mengatasi keinginan. Hari ni dikuatkan semangat buat juga....dan akhirnya tak sempat sejuk dan pindah atas redai selamat sudah masuk ke dalam perut kami bertujuh....<br />

100 gram mentega bergaram, dilembutkan<br />
1/4 sudu teh esen vanilla<br />
35 gram gula perang<br />
<br />
Cara untuk Intinya<br />
<br />
Pukul mentega dalam mixer pada kelajuan sederhana selama 3 minit. Masukkan esen vanilla dan gula perang dan pukul hingga sebati. Tuangkan adunan kedalam mangkuk dan bekukan dalam peti sejuk. Bahagikan adunan inti kepada 10 gram dan bulatkan dan simpan dalam peti sejuk sehingga sedia untuk digunakan.<br />

<br />
100 gram mentega, dilembutkan<br />
80 gram gula aising, diayak<br />
2 biji telur, dipukul sedikit<br />
1 sk NESCAFE dicampurkan dengan 1 sudu besar air<br />
2 sk coffee emulco<br />
100 gram tepung gandum, + 1 sk serbuk kulit kayu manis - ayak.<br />

Cara untuk Topping<br />
<br />
Pukul mentega dan gula aising pada kelajuan sederhana selama 5 minit sehingga adunan ringan dan gebu. Masukkan telur sedikit demi sedikit. Masukkan nescafe dan emulco.<br />
Masukkan tepung dan putar pada kelajuan perlahan sehingga semuanya sebati.<br />
Masukkan ke dalam piping bag dan sejukkan dalam peti sejuk sehingga sedia untuk digunakan.<br />
<br />
RESEPI ROTI<br />
Bahan A:<br />
<br />
Tepung gandum- 500 gram<br />
Gula kasar- 60 gram<br />
Garam- 8 gram<br />
Yis- 8 gram<br />
Bread Improver- 5 gram<br />
Marjerin- 60 gram<br />
Bahan B:<br />
<br />
Telur- 1 biji gred C<br />
Ais Kiub- 100 gram<br />
Air biasa- 140 gram<br />
<br />
Cara untuk uli menggunakan mixer:<br />
<br />
1) Timbang bahan A dan masukkan ke dalam bowl.<br />
<br />
2) Timbang bahan B dan masukkan ke dalam A.<br />
<br />
3) Putar menggunakan mixer dengan menggunakan speed rendah dahulu sehingga sebati.<br />
<br />
4) Kemudian boleh tukar ke speed medium. Putar sehingga doh elastik iaitu doh licin, berkilat dan tarik tidak putus. [ Jika guna bread maker @ BM ]<br />
<br />
1) Masukkan bahan cecair di bawah dulu. Bahan kering di atas.<br />
<br />
2) Sukatan ais kuib boleh tukar ke air biasa.<br />
<br />
3) Boleh uli dua kali untuk dapatkan hasil roti yang halus.<br />
<br />
Dah siap uli, timbang doh 20 gm dan 30 gm (untuk sebiji roti). Ambil doh 20gm leperkan. Isi inti, tutup inti dan bulatkan doh. Leperkan doh 30gm dan balut doh yg berisi inti, bulatkan dan letak atas cup atau loyang. Buat hingga selesai. Biarkan doh kembang selama 2 - 3 jam. (bergantung pada suhu bilik).<br />
<br />
Bila doh dah cukup naik, paipkan topping bentuk spiral. Bakar dalam oven pada suhu 180 celcius selama 25 - 30 minit.<br />

3/4 cawan serbuk koko<br />
1 1/2 cawan susu pekat brsmaan satu tin<br />
1/2 tin susu cair atau gune susu segar 3/4 cawan<br />
4 biji telur<br />

Cairkan mentega<br />
Matikan api dan masukkan serbuk milo dgn serbuk koko, kacau.<br />
Masuk susu pekat, susu cair atau susu segar.<br />
Masukkan telur dan kacau hingga sebati.<br />
Masakkan sampai pekat dengan api kecil.<br />
Masukkan biskut merry dan gaul laju2..<br />

Ambil 2 loyang saiz 6 inci yg boleh buka kat bawah. Bahagi 2 biskut masukkan dalam loyang dan padat2kan. Ketepikan. Sediakan lapisan cheese.<br />

Cheese Bake<br />
500g cream cheese<br />
150g gula halus<br />
4biji telur<br />
<br />
Pukul semua bahan menggunakan moxer hingga sebati.<br />
Bahagi dua dan tuang atas kek batik tadi ratakan.<br />
Panas oven suhu 170api atas sahaja. Bakar masa 20 mnit atau brgantung pada oven masing2. Selepas 20 mnit boleh cek sentuh guna jari kalau dh xmelekat kat jari masak la tu.<br />
Keluarkan dari oven dan ketepikan.<br />

300 gm dark compound atau milk compound<br />
200 ml whipping dairy<br />
2 sb mentega<br />
<br />
Satukan dan masak guna kaedah double boil<br />
<br />
2sb gelatin halal atau 1 sk serbuk agar2<br />
1/4 cawan air panas<br />
satukan sampai larut dan tuang dalam ganache tadi dan kacau sebati.<br />

Tuang ke atas lapisan cheese tadi dan sejukkan semalaman<br />
<br />
Sisip tepi2 dgn pisau yg dh celup air panas dan lap.<br />
Keluarkan dan potong.<br />

Minum petang. Kesian hari ni ummi tak masak dari pagi....diorg makan roti dan panaskan lauk semalam yang ayah masak tu jer. Dah petang baru start masak utk makan malam dan minum perang.<br />

Petang ni buatkan kuih terengganu .kayu keramat. Anak nak kuah kastard hijau yang selalu makan dengan cakoi tu tapi ummi malas nak buat. Makan la gitu jer wahai anak2 ku.<br />

3 biji pisang berangan..@ 1 cawan pisang yg dah dilecek + campor dengan 1 sdb perahan lemon/limau kasturi/limau nipis (kalo pisang tu besar guna 2 jer..cth pisang yg biasa jual kt pasar raya kan besar..guna 2, kalo guna pisang emas 7@8biji )<br />
3/4 cawan gula perang<br />
6 biji telur gred C<br />
1 cawan minyak<br />
1/2 sk garam<br />
1 sk esen pisang (optional - kalau letak baunya harum setaman)<br />

Bahan ayak<br />
1 1/2 cawan tepung gandum<br />
1 sk baking soda<br />
2 sk baking powder<br />

Hiasan<br />
Hirisan pisang potong nipis(kalau tebal pisang tenggelam)<br />

Caranya<br />
<br />
Satukan minyak,telur, gula, garam dalam blender dan kisar 5-6mnt. Masukkan pisang blend sekejap (30 saat)<br />

Satukan bahan ayak dlm bekas...tuang bahan kisar dalam bekas bahan ayak..kacau sebati.. Panaskan oven 10 mnt suhu 170*api atas dan bawah...lenser mentega pada loyang.. nak kek tebal guna loyang saiz 9x9 inci...nak x berapa tebal bleh guna loyang 11x11 inci......lapik baking paper.......tuang adunan dlm loyang..letak hirisan pisang...bakar selama 50mnt atau hingga masak.. P/S= kalo nak kukus pun boleh..kukus 1 jam.<br />

Cara2nya<br />

Panaskan oven pada suhu 170 celcius. Griskan loyang atau alas baking paper ketepikan.<br />
<br />
Dalam mangkuk adunan satukan tepung, gula, serbuk koko, baking soda dan garam. Gaul rata.<br />
<br />
Masukkan telur, buttermilk, mentega cair dan esen. Pukul sebati selama 3 minit. Akhir sekali masukkan air kopi. Gaul rata menggunakan spatula atau senduk. Adunan kek ini sangat cair, jangan tambah sebarang bahan lagi.<br />
<br />
Tuang adunan ke dalam lotang bersaiz 9 atau 10 inci. Bakar selama 40 minit atau hingga masak (masa membakar bergantung pada saiz loyang dan oven masing2). Cucuk tengah2 kek dengan cake tester atau lidi pencungkil gigi, kalau bersih takde adunan lembab melekat maknanya kek dah masak.<br />
<br />
Keluarkan dari oven. Biarkan dalam loyang selama 15 minit. Kemudian terbalikkan di atas wire rack atau cake board dan biar sejuk sepenuhnya sebelum dihias.<br />

Kuih ketayap utk sarapan pagi tadi....dah lama tak buat. Warna bulan 100% pandan asli....ada dua helai jer tadi jadi campur sikit dengan pewarna hijau apple....macam terover pulak kehijauannya.<br />

Garam secukup rasa<br />

kisar air dengan daun pandan dan tapis untuk mendapatkan warna dan haruman semulajadi.<br />
Masukkan semua bahan dan kisar sebati hingga sebati.<br />

Untuk inti<br />
<br />
(biasanya saya buat banyak2 dan simpan dlm peti beku - inti ni boleh guna untuk buat koih koci, badak berendam, kuih bom, pulut inti, kuih ketayap dll)<br />

1 biji kelapa parut<br />
Gula melaka dan gula perang secukup rasa<br />
Secawan air<br />
3 helai daun pandan dicarik dan disimpul<br />
1 1/2 sb tepung gandum<br />

Cara-cara<br />
<br />
Masukkan kelapa parut, air pandan, gula. Kacau sehingga sebati sehingga inti kelapa tadi bercampur dengan gula dan airnya hampir kering. Taburkan tepung gandum. Kacau sebati. Masak hingga inti berkilat dan tiada air keluar. <br />
(Saya suka inti yg tidak terlalu kesing/kering berderai macam serunding kelapa tu. Penggunaan tepung dalam inti ni dapat mengekalkan inti yg lembab2 tapi tidak berair)<br />
<br />
Untuk menyediakan kuih ketayap<br />
<br />
Panaskan pan dengan api sederhana, letakkan sedikit minyak dan sendukkan 1 senduk adunan tadi dan layangkan pan agar adunan tadi membulat (ini utk buat bentuk biasa).<br />
Masak sehingga 2-3 minit, angkat - jangan masak terlalu lama. Nampak tepi2nya dah kering tu maknanya dah masak la.<br />
<br />
Setelah angkat terus masukkan inti dan gulung. (Cara gulung; , lipat kedua dua tepi sedikit dan gulung melentang. Ulangi sehingga adunan tadi habis. Siap untuk disantap.....tapi untuk viewer sedia untuk ditatap jer ler yer...huhuhu.<br />

Minyak zaiton untuk menumis.<br />

Tumis bawang dan halia cincang hingga naik bau. Masukkan daging cincang dan tumis hingga berubah warna dan air daging sejat.<br />

Nasi daging utara untuk kuliah maghrib bersama ustaz syed......masak bergotong-royong dengan orang2 kuat surau Ar Raihan. 11 kg daging korban yang memang disimpan utk kegunaan jamuan kuliah, 7 kg beras basmathi, jelatah dan air asam kerisik bakal dinikmati bersama tetamu rumah Allah malam ni.</div>

Masakan ni tak cukup bahan disebabkan kekangan bajet. Sepatutnya sekg serbuk badam, gajus, yogurt dan rempah empat sekawan tinggal bertiga jer. Bunga cengkih kehabisan stok dipantry surau. Daun pandan pun terpaksa dilupakan kali ni.</div>

Cara memasak kali ni terpaksa diubah suai kerana ketiadaan periuk besar. Abam sayam saya berada diluar kawasan jadi tiada kederat nak mengeluarkan periuk dari stor barangan dapur kat rumah.</div>

1 kg daging - dipotong agak besar (12 - 14 ketul) direbus sehingga lembut dan jangan lupa simpan air rebusan untuk memasak nasi kemudian.<br />
Kalau tak mahir potong daging, biar saja penjual daging memotong untuk anda. Cuma bagi tahu berapa ketul yang anda perlukan. Kalau Daging segar korban peh!..tak yah rebus ia adalah amat baik.-</div>

1 kg berasmathi - basuh dan rendam 30 minit.<br />
Sukatan air rebusan daging yang diperlukan sama dengan sukatan beras 1:1 1/4 sekiranya menggunakan basmathi pusa.<br />

Cara-Cara Memasak:</div>
<div dir="ltr">
1. Panaskan periuk, masukkan minyak kemudian minyak sapi.<br />2. Bila minyak panas, masukkan Garam masala, bawang hiris, bawang putih dan halia dikisar, daun pandan, biji jangus dan kismis dan bawang dikisar.</div>
<div dir="ltr">
3. Bila tumisan mula keluarkan bau yang harum masukkan daging yang telah rebus, masukkan rempah kari dan beriani, tairu dan kisaran buah badam. Jangan sampai hangit dgn segera masukkan air rebusan daging yang telah tapis. Masukkan gula batu dan garam secukup. Rasa kemasinan air. Tutup tudung periuk.</div>
<div dir="ltr">
4. Apabila air mula mendidih buka tudung dan masukkan beras dan kacau perlahan. Apabila air mula mengering, Kecilkan api dapur dan tutup tudung periok dgn ketat. Boleh tindihkan tudung dgn benda yg berat seperti batu lesong supaya wap tidak terlepas keluar dgn banyak.</div>

5. Tunggu sampai wap mula keluar dari tudung periok isyarat nasi mulai masak.<br />Biasanya nasi akan masak dengan sempurna 25minit - 35 minit. Api dapur perlu dijaga supaya nasi tidak hangit. Kepada yang baru ingin mencuba dan tidak pandai mengawal api dan masak dalam kuantiti kecil boleh gunakan kuali leper sebagai pelapik periok anda supaya api dapur boleh dikawal.</div>

6. Apabila nasi telah masak mencungkil menggunankan sudip dan terbalikan nasi dari bawah ke atas supaya nasi lebih peroi. Dua atau tiga kali memadai.</div>

7. Jangan kerap buka tudung periok nasi. Ini akan menyebabkan wap terkeluar banayak dan Nasi anda menjadi mentah. Sekiranya nasi anda menjadi mentah, renjiskan air panas (guna sudu) ke atas nasi dan masak kembali dengan api yang sama. Hahaha...kalau mentah juga...kukus saja nasi itu...hehehe!. Jadi Nasi Daging Kukus hahaha!.</div>

Kuih ulat bulu namanya.....kuih ni adik beradik buah melaka. Bezanya cuma pada inti dan bentuk ..kalau buah melaka intinya gula melaka atau gula merah (kat kg dulu biasa guna gula merah). Kuih ulat bulu ni intinya kacang merah.<br />

Perbezaan lain adalah pada bentuknya yg bujur berbanding buah melaka y<span style="text-align: center;">g berbentuk bulat. </span><br />

Cara penyediaan kuih ni sama macam buah melaka. Saya kongsikan resepi pada sesiapa yg ingin mencubanya. Sesuai sangat dijadikan juadah untuk minum petang dan kalau nak menziarah sesiapa boleh la bawak kuih yang mudag cara penyediaan dan sangat menarik kerana kuihnya berwarna warni persis lampu trafik😅😅😅.<br />

Pewarna kuning, hijau dan merah<br />

Masukkan tepung ke dalam mangkuk. Tuang air sedikit demi sedikit sambil gaul rata dan uli menjadi doh yg tidak terlalu lembik dan senang dibentuk.<br />
<br />
Bahagi adunan kepada tiga bahagian. Titiskan pewarna berlainan untuk setiap adunan. Uli hingga warna doh sekata.<br />
<br />
Air secukupnya untuk merebus<br />
Daun pandan untuk membangkitkan aroma kuih<br />
Inti kacang merah (boleh dibeli di kedai bakery)<br />
Kelapa parut rang digaul dengan sedikit garam<br />

Cara2nya<br />
<br />
Ambil sedikit doh. Leperkan dan letak inti kacang.tutup doh dan bentukkan membujur.<br />
<br />
Susun atas bekas yg telah dioles dengan sedikit minyak untuk mengelakkan doh melekat atas bekas. Buat sampai siap.<br />
<br />
Didihkan air dengan daun pandan. Rebus doh hingga timbul. Angkat dan golekkan ke dalam kelapa parut.<br />

Pukul mentega dan gula smpai kembang<br />
Masukan telur satu persatu..pukul lagi ssmpai kembang.<br />

Masukan *esen vanilla, susu cair, gaul hingga sebati dan masukan tepung sedikit demi sedikit<br />
Bahagikan 4 bahagian..campurkan satu bahagian dengan pewarna pilihan dan gaul rata.<br />

Griskan loyang dan tabur sikit tepung.. Masukan 1 sudu besar adunan ke tengah2 loyang. Tuang adunan lain secaran berselang seli. Ulangi proses hingga adunan habis.<br />

Bakar lebih kurang 50 - 60 min menggunakan suhu 170 Degree atau ikut oven masing2…<br />

1/2 cawan fresh flat-leaf parsley- cincang<br />
3 sb fresh rosemary - cincang<br />
1 1/2 sb fresh sage - cincang<br />
Garam secukup rasa<br />
1/2 sk serbuk lada hitam<br />
1/2 kg Lamb - saya guna bahagian daging sahaja kali ni (nak guna bahagian lain pun boleh)<br />

6 ulas bawang putih belah 2<br />
1 biji bawang besar - potong wedges<br />

Cara2nya<br />

Gaul rata semua bahan2 di atas. Perapkan selama 2 - 3 jam atau boleh jer nak grill terus. Grill hingga masak. (Saya grill dalam oven).<br />

Masukkan dalam tray. Tabur bawang putih dan besar. Bakar dlm oven pada sihu 250 celcius hingga masak (ikut citarasa nak medium rare ke...well done ke)<br />

Kalau nak masak guna griller pun boleh...<br />

Saya hidang dengan keledek bakar - keledek potong ikut suka, gaul dengan garam minyak zaitun, serbuk lada hitam dan chilli flake. Kemudian bakar sampai empuk.<br />
